Tasty and healthy, a spring carrot cake

Baking a carrot cake is one of those things that everyone should try at least once in their life. It's a classic dessert that is perfect for any occasion, from birthdays to afternoon tea. And, best of all, it's easy to make and incredibly delicious.
Ingredients:
-2 cups all-purpose flour
-2 teaspoons baking powder
-1 teaspoon baking soda
-1 teaspoon cinnamon
-1/2 teaspoon salt
-4 eggs
-1 1/2 cups granulated sugar
-1 cup vegetable oil
-2 cups grated carrots
-1 cup chopped walnuts
-1/2 cup raisins
Instructions:
Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-inch cake tin with some butter.
In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, whisk together the eggs and sugar until pale and fluffy.
Gradually add the oil to the egg mixture, whisking well.
Fold in the dry ingredients to the egg mixture until well combined.
Finally, add the grated carrots, walnuts, and raisins to the mixture and fold until everything is evenly distributed.
Pour the batter into the prepared cake tin and bake for 45-50 minutes, or until a toothpick inserted into the middle comes out clean.
Remove from the oven and let the cake cool in the tin for 10 minutes before transferring onto a wire rack to cool completely.
Decorate your carrot cake with cream cheese frosting or your favourite icing and serve.
To make cream cheese frosting, beat together 8 ounces of cream cheese, 1/4 cup of unsalted butter, 2 cups of powdered sugar, and 1 teaspoon of vanilla extract until smooth.
